Ulcerative Colitis, 29 year old female
The patient struggled for years with navigating painful ulcerative colitis, weight loss of 20 lbs, diarrhea 30 times per day, nausea and panic attacks. We worked together in my program for six months and used testing to pinpoint deficiencies and correct an imbalanced digestive tract.
Results: Remission achieved 2 months into the process. After 10 months of working together the patient was back to her normal body weight and able to tolerate many foods that she wasn’t able to previously (even when in remission previously). Most importantly, the long term change was that she was able to navigate future flares with more ease. In her words “they feel like bumps in the road instead of mountains”. Panic attacks were reduced from four times per week to once every three months after correcting the deficiencies we uncovered and getting on a higher quality multivitamin.
IBS and Depression/Anxiety patient, 10 year old female
The patient was struggling with on-going constipation, severe anxiety and low mood. Patient was dealing with anxiety while at school and was struggling with limited foods that were tolerable. Parents expressed that she also struggled with focusing in class.
Results: Over 12 months, we were able to work together to identify which foods were causing her physical pain (previously it was just thought to be her preference). We worked on bringing in foods to help support her gut health and she now has normal bowel movements and the anxiety and low mood have lessened significantly. Parents noticed that she was able to focus much better in class with our interventions alone.
Multiple Autoimmune conditions, Arthritis, Cellulitis, Diarrhea, 59 year old female
The patient was dealing with multiple autoimmune issues including a neurological one which caused her leg to go numb often while driving. She had severe cellulitis that she had to manage with long term antibiotics and often ended up in the hospital 1-2 times per year with a flare of symptoms. She was also dealing with vague IBS symptoms, muscle pain and joint pain.
Results: Over the course of 16 months, we worked together to reduce inflammation using a diet approach that was more supportive of her digestive health. At the 12 month mark, she was feeling much better and in less pain and her cellulitis patch had shrunk to a small area of the leg (down 85%). At the end of nutritional treatment, she was thrilled to be able to drive normally again and her cellulitis was completely resolved. Her doctor reported improved neurological health in her MRI at the 16 month mark.

When I started working with Ashley, I was frustrated with doctors not being able to tell me why I had such bad gastrointestinal problems. I had lots of stomach issues and uncontrollable bowel movements. I was taking Imodium every night just to manage. This affected my life significantly, I was always anxious to leave the house, which kept me isolated. I also rarely ate out as I usually had a reaction which led to a general fear of eating. I had 2 colonoscopies and was told I was fine even though I knew I wasn't. One doctor actually told me it my digestive symptoms were just a result of my PTSD. After working with Ashley in the 6 month program, I am happy to say that I have only had a couple of these bowel movements and I am more confident about going out more. I am now off of Imodium completely which feels great. The process has also helped me to feel more confident in the food choices that are best for me. I really enjoyed the process- she is SO sweet! I could tell she really cared about my physical health. This has been life changing. So glad I invested in my health.

Meeting with Ashley was one of the best decisions I’ve made in my journey. I was diagnosed with multiple sclerosis in 2010 and I also developed a bad case of stomach bug while I spent some time in India. The stomach issue seemed to trigger my MS to the point where I was not able to walk for two weeks. I sought Ashley's support to focus on my nutrition to support my digestive health so that I can reduce the chances of another MS attack. We did some work discovering what foods I'm reactive too and looked at my upgrading my body care regimen. One of the best things that I received from Ashley was a nutrition plan which helped to guide my food choices. I’ve noticed a significant improvement in my health after following the new plan and I look forward to what's to come.

Meeting Ashley and following her Food as Medicine approach has been life changing for me. I was diagnosed with a debilitating autoimmune disease in addition to suffering with chronic inflammation. Her guidance based on scientific knowledge to healthier eating and supplement support of my micronutrient deficiencies has reduced my inflammation and helped keep my autoimmune symptoms at bay. Ashley is a great listener, easy to talk to, genuinely caring and able to apply her knowledge to help.

Ashley is a Godsend! I was diagnosed with MS in 2005, took disability in 2010, and started a new therapy in 2014. Unfortunately, the new therapy was awful and I ended up with a lot of stomach issues. I saw several doctors for much needed relief within a three-year period, and all of them just prescribed medication in hopes of resolving the issue. None of the doctors were helpful, and I continued to lose weight. I found Ashley through the grace of God. She is incredibly knowledgeable in nutrition and functional medicine, and she has turned my life around. Within one month, all of my stomach issues were resolved and I immediately started gaining weight. I have recommended Ashley to several friends and family members as she truly is the best!

Ashley is amazing. I went to her with severe stomach issues after being blown off by numerous doctors. Within 2 weeks I noticed a difference and now 6 months later I feel like A whole new woman. I recommend anyone and everyone to visit her. She is very knowledgeable with food as medicine. She believes in healing her clients.

Ashley is great. She listens very well and pays attention to what you say. She's helped me more in 5 months than 3 different doctors did in a couple years. She's knowledgeable and able to apply her knowledge to help. I now have tools to help me manage my food sensitivities and I feel I getting real help for the future. I highly recommend her.

When I turned I was diagnosed with Ulcerative Colitis, I first sought care from the traditional managed care route and smaller GI clinic in NC. The doctors I saw were limited to 5 minutes per visit and did all they knew and were allowed to do - prescribe a battery of prescription meditations (many just to counter side effects of the heavy stuff). Following this my health and energy declined, I was forced to leave my job, and my weight dropped to 125 lbs at its lowest (I'm 6'1" usually 155-165 lbs). At this point I went to the ER for a week, switched to another GI doctor at a teaching hospital and found Wellness by Design - Ashley Hurst as well. Together, we stopped all my medications and worked exclusively with diet and alternative therapies (probiotics, home made yogurt, elimination diets, etc). Immediately things turned and over a year I was able to regain the muscle mass, strength, energy, and mental clarity I had previously lost. Although I no longer am the endurance athlete I was before, Ashley helped me to create a gym and strength strength training routine I've found to be incredibly beneficial as well.
